Our Philosophy
Patience, Ingredients, and Time.
We believe there are no shortcuts to greatness. Our sourdough ferments slowly over 48 hours to develop its deep, complex flavor. We source our stone-ground organic flour from local mills, use high-butterfat European-style butter for our laminated pastries, and rely on wild yeasts cultivated right here in our bakery.

Cold water, organic flour, and our decades-old starter are gently combined, initiating the long, slow fermentation process that builds flavor and structure.

The Shape
Every loaf and pastry is divided and shaped entirely by hand. This gentle handling preserves the delicate gas pockets generated during fermentation.

The Bake
Baked on stone hearths at scorching temperatures. The intense heat creates the signature blistered crust while keeping the crumb incredibly tender.
